Tiramisu — The Classic from Treviso

The original recipe is surprisingly simple: mascarpone, eggs, sugar, espresso coffee and ladyfingers. Nothing more.

Ingredients (8 servings)

  • 500 g mascarpone
  • 4 eggs, separated | 100 g sugar
  • 300 ml strong espresso, cooled
  • 200 g ladyfingers | Cocoa for dusting

Instructions

  1. Beat the egg yolks with the sugar until a white, frothy mixture forms.
  2. Add the mascarpone, stir gently.
  3. Whip the egg whites into stiff peaks, add to the cream.
  4. Quickly dip the ladyfingers in the coffee (2–3 sec), arrange in a dish.
  5. Spread half of the cream. Another layer of ladyfingers. The remaining cream.
  6. Refrigerate for at least 4 hours. Dust with cocoa before serving.
