Риболита — Тосканска Зеленчукова Супа | Ribollita Рецепта

Ribollita – the Tuscan poor man's food that has become a symbol of the region. Made with beans, vegetables, bread, and Carapelli olive oil.

Ingredients (for 6 servings)

  • 400g white beans (canned)
  • 400g Mutti Pelati tomatoes
  • 3 tbsp Carapelli Extra Virgin olive oil
  • 200g stale bread, torn
  • Kale or savoy cabbage, carrot, celery, onion

Method of preparation

  1. Sauté the vegetables in olive oil for 10 min.
  2. Add the beans, tomatoes, and 1 liter of water.
  3. Boil for 30 min, add the bread and boil for another 15 min.
  4. Serve with plenty of Carapelli and black pepper.
