Pasta alla Norma — the icon of Sicily. Agromonte cherry tomatoes, fried eggplant, basil, and ricotta salata.
Ingredients (for 4 servings)
- 500g Barilla Spaghetti No. 5
- 520g Agromonte Ciliegino Cherry Tomatoes
- 2 eggplants, sliced and fried
- 100g Agromonte Pesto Basilico
- Ricotta salata for serving
- 2 tbsp. Carapelli Extra Virgin Olive Oil
Instructions
- Fry the eggplant until golden.
- Cook Agromonte Ciliegino for 15 minutes with garlic and olive oil.
- Cook the spaghetti al dente, mix with the sauce.
- Add the eggplant, basil, and grated ricotta.
