Pasta alla Norma — the icon of Sicily. Agromonte cherry tomatoes, fried eggplant, basil, and ricotta salata.

Ingredients (for 4 servings)

  • 500g Barilla Spaghetti No. 5
  • 520g Agromonte Ciliegino Cherry Tomatoes
  • 2 eggplants, sliced and fried
  • 100g Agromonte Pesto Basilico
  • Ricotta salata for serving
  • 2 tbsp. Carapelli Extra Virgin Olive Oil

Instructions

  1. Fry the eggplant until golden.
  2. Cook Agromonte Ciliegino for 15 minutes with garlic and olive oil.
  3. Cook the spaghetti al dente, mix with the sauce.
  4. Add the eggplant, basil, and grated ricotta.
