It is made from high-quality pork cheeks that are salted, seasoned (often with black pepper, rosemary or juniper) and left to mature until they develop their characteristic aromatic complexity. When cooked, the fat of the guanciale melts and creates a velvety base for sauces - particularly effective in Carbonara , Amatriciana and Gricia . It is also suitable for finely slicing on warm focaccia, bruschetta or for enriching soups and risottos.
