It belongs to the category of “pasta filata” type cheeses , distinguished by their characteristic texture , achieved thanks to the natural property of milk casein to “twist and spin” under certain conditions of acidity and temperature.
The pasta filata technique is part of the Italian dairy tradition , originating in Southern Italy. The term mozzare itself means "to cut" - reminiscent of how master cheesemakers manually separate and shape the pasta into classic mozzarellas.
Pizza mozzarella 1 kg is brine-free , which makes it extremely practical for use in pizzerias, restaurants and kitchens with a high workload. It has a milky taste, smooth texture and excellent melting properties , as it does not release excess water when baking.
